Corn - Pecan Cream Cheese Dip

Ingredients

2 - packages (8-ounces) cream cheese, softened
1/4 - cup lime juice
1 - Tablespoon ground cumin
1 - Tablespoon ground red chiles
1/2 - teaspoon salt

1/8 - teaspoon black pepper
1/4 - cup olive oil
1 - can (16-ounces) whole-kernel corn, drained
1 - cup chopped pecans
1 - small onion, diced

Chips (potato or tortilla)

Directions

  • In a large bowl, add cream cheese, lime juice, cumin, chiles, salt, pepper, and olive oil.
  • With a electric mixer, beat until smooth.
  • Next, add the corn, pecans, and onion.
  • Stir.
  • Spoon into your serving bowl.
  • Serve with chips.
